Vegan, Gluten Free, Healthy Chocolate Chip Cookies
Should someone ask me to name my favorite recipe I have created, I would without a doubt answer my Chocolate Chip Cookies. it´s true, this is my most successful and beloved recipe I have ever created. I first came up with this recipe two years ago after several trials on my quest to make the best healthy chocolate chip cookies ever.
These babies are not only delicious, they are also naturally GLUTEN FREE, DAIRY FREE, and VEGAN (if using the right kind of chocolate). They do not have the same consistency as the traditional chocolate chip cookie, they are softer but still have the right taste to them. Give the cookies a try, you won´t be disapointed.
Emma´s Chocolate Chip Cookies
3 dl ( 220 gram) chickpeas
100 gram ( about 10) soft medjool dates
2 tbs peanut butter
3 tbs Almond flour or Hazelnut flour
1 tsp vanilla powder
pinch of salt
1 tbs coconut oil
1 tbs almond milk
1 tsp liquid sweetener
1 tsp baking powder
55 gram sugar free chocolate chips or chopped sugar free chocolate.
Set the oven to 175C/350F
Rinse and dry the chickpeas on a sheet of paper
In a food processor; add chickpeas and dates (pitted), mix until there are no big lumps left.
Add peanut butter, almond milk and liquid sweetener. Go until smooth.
Add almond/hazelnut flour, salt, vanilla powder, and baking powder and mix.
Add coconut oil and mix until you have a nice looking batter.
Transfer to a bowl (or remove the blade in the food processor) and stir in the chocolate chips.
Cover a cookie sheet with parchment paper. Use a spoon to make little cookies, wet your fingertips to flatten the cookies out as they will not do so naturally in the oven.
Bake in the oven for 12-15 minuties, let cool before touching.
Emma´s Chocolate Chip Cookies
3 dl (220 gram) kikärtor
100 gram ( ca 10 stk) mjuka dadlar
2 msk jordnötssmör
3 msk mandelmjöl eller hasselnötsmjöl
1 tsk vanilj pulver
en nypa salt
1 msk kokosolja
1 msk mandelmjölk
1 tsk flytande sötning
1 msk mandelmjölk
1 tsk bakpulver
55 gram sockerfria chocolate chips eller hackad sockerfri choklad
Värm ugnen till 175C
Skölj kikärtorna och torka på hushållspapper
in en matberedare; mixa kikärtorna med dadlarna (urkärnade) tills det inte finns stora klumpar.
Tillsätt jordnötssmör, mandelmjölk, och flytande sötning och kör tills du fått en slät smet.
tillsätt madel/hasselnötssmjöl, salt, vaniljpulver, och bakpulver och mixa.
tillsätt kokosolja och mixa tills du har en fin smet.
Använd en sked för att forma små kakor på en plåt täckt med bakplåtspapper. Blöt fingertopparna för att platta till kakorna eftersom de inte kommer plattas till i ugnen.
Sätt in i ugnen i 12-15 minuter, låt svalna innan du rör dem.
