Vanilla Angel Bites
I came up with this recipe a long time ago, in fact, it was one of the very first recipes I ever created. I fell in love right at the first bite, hence the name Vanilla angel bites. These are perfect when you are craving something sweet but do not want something with chocolate. Give these little bits of heaven a try and I promise you, you will love them. INGREDIENTS 230 gram soft dates (about 18 dates) 25 gram goji berries soaked in warm water for 2 h 40 gram cashews soaked in warm water for 2 h 20 almonds 2 tbs coconut oil 80 gram rolled oats 50 gram shredded kokos, roasted in a pan 1/4 tsp salt 1 1/2 tsp vanilla powder 1. Pit the dates and place the dates in a food processor together with the cashews and almonds. Go until there are no big lumps. 2. roast the shredded coconut in a dry pan until golden brown. 3. Add the roasted coconut, rolled oats, goji berries, vanilla powder, coconut oil and salt. 4. Mix to a fine dough. 5. Roll into small balls. 6. Optional: roll balls in shredded coconut, rolled oats, chopped almonds or shopped goji berries. Store in the fridge in you plan on eating them in the next few days, otherwise, store them in the freezer. INGREDIENSER 230 gram dadlar (18 st) 25 gram gojibär blötlaggda i varmt vatten i 2 h 40 gram cashews blötlagda i varmt vatten i 2 h 2 msk kokosolja 80 gram havregryn 50 gram riven kokos, rostad 1/4 tsk salt 1 1/2 tsk vaniljpulver 20 madlar 1. Urkäna dadlarna och lägg dem i matberedaren med cashew nötterna och mandlarna. Kör tills inga stora klumpar finns kvar. 2. Rosta kokos flingorna i en torr stekpanna tills de får en gyllenbrun färg. 3. Addera den rostade kokosen, havregryn, gojibären, vaniljpulver, kokosolja och salt till matberedaren. Kör tills du får en slät deg. 4. Rulla små bollar och rulla dem sedan i valfri garnering (t.ex. kokos, havregryn, hackade mandlar & gojibär) 5. Förvara i kylen om dem ska ätas de närmsta dagarna, annars förvarar du dem bäst i frysen.
